Course Description
This course introduces students to Italy’s lesser-known villages and the innovative concept of the albergo diffuso, highlighting how small-scale, community-centered hospitality helps preserve local culture. It explores practical ways to travel across Italy, from trains and buses to regional transport options, and provides an in-depth look at the Routes of Taste and local craftsmanship, with special attention to traditional cuisine and artisanal heritage. Students will also examine sustainable and responsible tourism practices, learning how to experience Italy in a meaningful, respectful way that supports communities, preserves cultural traditions, and promotes environmental awareness. By the end of the course, participants will gain both practical knowledge and a deeper appreciation for Italy’s rich cultural and culinary landscapes.

Eleonora, originally from Rome, has a degree in Tourism Management, an Erasmus experience in Madrid, and a College Diploma in Travel and Tourism Business Management from Vancouver, where she now lives and shares her passion for teaching while continuing to learn with her students.
